Something wrong (usually unintended).
 
We see a metaphor: the expression “shucks!” emphasizes the meaning “unnecessary” of its prototype. The adding of “-s” is analogous to the words “yikes”, “oops” (and lost its connection with the plural form).
Etymology : This word represents an etymological connection with the word “shuck” meaning “waste”, “an outer covering of some food, which cannot be eaten”.
