To fight or confront. Apparently in this context, this phrase means a challenge. Knuck is short for knuckle up or rather, get ready to fight. It is a form of metonymy, referring to the knuckles, which are part of the fists used to fight. There is also some sound symbolism in that knuck sounds somewhat like the sound that results from a coming in contact with another’s body.
 
Knuck if you buck.
