To leave, especially when trying to leave unnoticed.
 
This party is boring. I'm going to dip out.
Etymology : The term means to leave, so the “out” half of the phrase seems to reference going out, ie leaving a place. It would seem likely that the “dip” half of the phrase references going unnoticed. When someone dips down, it can mean to drop out of sight. Putting the two together creates the meaning of going out or leaving without being seen.
