An enchilada filled with meat seasoned with taco seasoning, as opposed to grilled or fajita meat Finding himself in a humorous situation and eating an enchilada with a new flavor, the speaker wanted to come up with a unique word for the food. The blending of the words represents the blending of the distinct tastes of the individual foods.
 
My enchilada is filled with taco meat; so it’s a tacolada.
